Lemon Butter Sauce
- 1 tbsp chopped parsley or chives
- Table salt
- 1 4oz. Salted butter stick
- 4 minced garlic cloves
- 1 tbsp lemon juice
- Freshly ground black pepper
- 1 chopped onion
- 1 sliced lemon
- 3 whole branzino
- Olive oil
Branzino Recipe Instructions:
- Preheat the oven to 425°F with the rack in the lower middle position.
- Melt butter in a pot at medium-high heat till it’s liquid and hot. About three to four mins later, add the onions & sauté till tender and transparent. Stir in the garlic for a min or so or until the onion/garlic mix is golden brown.
- Turn off the heat. Add salt, pepper, and parsley. Keep the sauce covered and at room temperature or slightly warmer.
- Dry any extra moisture from brait with paper towels. Cut deep, 2-inch slashes approximately one inch apart down both sides of the fish with a sharp knife. Place the fish on a large baking sheet coated with foil or parchment paper.
- Season each fish cavity with salt & pepper. Fill each cavity with two or three lemon wedges. Brush olive oil generously on both sides of each fish. Season both sides of every fish lightly with pepper and salt.
- Cook for 10 minutes in the oven. Quickly take the fish from the oven, adjust the oven rack to the top position, and place the fish under the broiler. Broil for five mins on high, looking carefully and moving the pan as needed.
- Serve using lemon butter sauce right away.
