For pasta:

  • Parmesan cheese, to serve
  • 1 lb. fettuccine
  • Parsley to serve

 

Instructions:

  1. Bring a saucepan of water with salt to a boil. Select your preferred pasta or noodles, then cook them till they are al dente. Drain the pasta, saving half a cup of the water.
  2. On a cutting board, arrange two boneless, skinless chicken breasts. Carefully cut each breast in half to form two thin cutlets.
  3. Add two tsp of Italian seasoning, garlic powder, pepper, & salt to each piece of chicken after liberally drizzling it with olive oil.
  4. Cook the chicken in a frying pan / skillet at medium-high heat for two to three mins per side, till it’s golden brown & cooked through. Take out of the pan and place aside.
  5. In the same pan, melt the butter till frothy. Add the garlic then stir for thirty to sixty seconds till it’s fragrant.
  6. Add the cream, herbs, & spice, then allow it simmer. Cook the cream for two to three mins, till it has slightly reduced.
  7. Add the Parmesan cheese & stir. Cook for an additional two to three mins, till the sauce covers the back of a spoon.
  8. Add sliced chicken, cooked pasta, & a few tbsp of the pasta boiling water after seasoning to taste with pepper & salt.
  9. Serve with Parmesan and fresh parsley.

Notes:

Pick boneless, without-skinned chicken breasts for a moist, tender result. Before frying, pound them with an even thickness to guarantee consistent cooking.
