  • 1 tsp thyme
  • 2 cups half & half
  • 1 tbsp olive oil
  • 1 chopped celery stalk
  • ½ cup shredded carrots
  • 2 tsp minced garlic
  • 16oz. potato gnocchi
  • ½ diced white onion
  • 4 cooked chicken breast (boneless & skinless)
  • 4 cups chicken broth
  • Freshly ground black pepper & kosher salt, as per taste
  • 1 cup chopped spinach


  1. In a pot, warm up the olive oil over medium heat. As soon as the onions are translucent, add the celery, garlic, onions, and carrots.
  2. Bring to a boil with the addition of the gnocchi and then add the chicken, chicken broth, pepper, salt, & thyme. Boil for a further three to four mins before lowering the heat to a gentle simmer and continuing to boil for ten mins.
  3. Cook for a further two or three minutes, stirring in half & half and spinach, till the spinach is soft. As needed, season with pepper & salt before serving.


The soup is infused with flavour from a variety of herbs and seasonings, including thyme, garlic, rosemary, & bay leaves. As you go, taste and adjust the spices to your preference.

For a richer flavour in chicken gnocchi soup, the foundation of the soup can be cooked with chicken broth or with chicken broth plus vegetable broth. Although using homemade broth will improve the flavor overall, store-bought alternatives are also acceptable.
