Ramen noodle, also called soba (not to be confused with buckwheat soba noodles), are made from wheat flour, egg, salt, and mineral water. And it’s this alkaline mineral water that gives ramen noodles their unique chewiness, flavor, and color.

  • 2 cups chopped kale
  • 4 tsp grated garlic
  • 2 packets instant ramen noodles
  • 1 cup shredded carrots
  • 1 oz. shiitake mushrooms
  • 4 cups water
  • 3 tsp grated ginger
  • 4 cups broth
  • 1 tablespoon sesame oil
  • ½ cup chopped scallion
  • Crunchy crumbs, for toppings
  • Sriracha, to taste


  1. In a skillet, warm the sesame oil on medium heat. Stir-fry the garlic & ginger for two mins, till they are tender and aromatic.
  2. Add the water and the broth. Add the mushrooms & simmer for ten mins till the mushrooms are tender & the broth is flavorful. Bring to a boil.
  3. When the instant ramen noodles have softened, add them to the heated liquid then simmer for an additional five mins. Stir in the scallions after adding them.
  4. Once the food has been taken off the heat, add the kale and carrots. Sprinkle crunchy panko crumbs on top plus a soft-boiled egg, if desired. To taste, add salt and sesame oil, hot sauce, chili oil, or soy sauce.


A few tsp of oil are heated at medium heat in a skillet to create golden, crunchy panko crumbs. Stir the panko for no more than a minute, till it turns golden brown. Take out and dry off on paper towels. To get the panko golden and crispy, you may alternatively mix it with a little oil then toast it in the oven.
